Ingredients

  • 3 medium carrots.
  • 1 Vidalia onion.
  • 2 stalks celery.
  • 1 zucchini.
  • 1 large squash.
  • 2 red/yellow bell peppers.
  • 1 medium green cabbage.
  • 1 clove garlic.
  • 2 cans vegan vegetable broth.
  • fine sea salt and pepper to taste.

Instructions
  • 1. Dice onions and garlic.
  • 2. Cut celery, carrots zucchini, squash, peppers and cabbage as desired.
  • 3. Over medium heat, add carrots and celery to pot with broth and cook for 10 minutes.
  • 4. Add other vegetables to broth and cook for 5 minutes. Cook longer if you prefer your vegetables soft.
  • 5. Add salt, pepper and other seasonings if desired.
  • 6. Reduce heat and allow to simmer for 5 minutes.
  • 7. Serve hot.
