Dough Ingredients

  • 2 cups all-purpose flour.
  • 1 1/2 teaspoons curry powder.
  • 4 tablespoons vegan margarine.
  • 4 tablespoons vegetable shortening.
  • 1/4 teaspoon fine sea salt.
  • 1/3 cup water.

Tofu Ingredients
  • 1 15oz. package firm tofu.
  • 1 medium onion, finely diced.
  • 1 teaspoon cumin.
  • 2 tablespoons vegan margarine.
  • 1/4 scotch bonnet pepper, seeded and deveined.
  • 2 tablespoons olive oil.
  • 1 teaspoon fine sea salt.
  • 1 teaspoon dried thyme.
  • 1/2 cup vegetable broth.
  • black pepper to taste.

Dough Instructions
  • 1. Pre-heat oven to 400 F.
  • 2. In a large bowl, combine flour, cumin, and salt.
  • 3. Add margarine and shortening and stir until mixture resembles coarse crumbs.
  • 4. Stir in water until mixture forms a ball.
  • 5. Shape dough into a log, and cut into 8 - 10 equal sections.
  • 6. Roll each section into a six inch circle, approximately 1/8 inch thick.
  • 7. Set aside for now.

Tofu and Baking Instructions
  • 1. Melt margarine in a skillet over medium heat.
  • 2. Saute onion until translucent.
  • 3. Crumble tofu into fine pieces.
  • 4. Add tofu to skillet while stirring.
  • 5. Add seasonings, cumin, salt, scotch bonnet pepper, black pepper and thyme.
  • 6. Continue to stir while tofu cooks to a brown color.
  • 7. Add vegetable broth and stir.
  • 8. Reduce heat and allow to simmer until liquid dissipates.
  • 9. Turn heat off.
  • 10.Add equal amounts of filling into each pastry circle.
  • 11.Fold over and press edges together with a fork, making a semi-circle.
  • 12.Brush the top of each patty with olive oil.
  • 13.Bake in preheated oven for 30 minutes, or until golden brown.
  • 14.Serve warm.
