Vegan Plantain Cake

Ingredients

  • 1 cup soft tofu.
  • 1 cup fresh ripe plantain puree.
  • 2 cups baking flour.
  • 1 cup brown sugar.
  • 1/4 cup agave nectar.
  • 1/2 cup vegan chocolate chips.
  • 3 tablespoons unsweetened vegan cocoa powder.
  • 1 teaspoon baking soda.
  • 1/4 teaspoon fine sea salt.
  • 1 tablespoon pure vanilla extract.
  • 1 teaspoon cinnamon.
  • 1/2 teaspoon ground ginger.
  • 1/2 teaspoon ground nutmeg.
  • 3 tablespoons canola or extra virgin olive oil.

Instructions
  • 1. Pre-heat oven to 350 F.
  • 2. Spray a 8"x12" rectangle baking pan with canola or olive oil.
  • 3. In a bowl, add flour, salt, baking soda and cocoa powder, mix well.
  • 4. Puree tofu and plantain in food processor or blender.
  • 5. In a separate bowl, add tofu and plantain puree, sugar, vanilla, oil and agave nectar.
  • 6. Add plantain mixture to flour mixture and mix with spatula until flour mixture is moist.
  • 7. Pour mixture into pan.
  • 8. Sprinkle chocolate chips.
  • 9. Bake in pre-heated oven for approximately 25 minutes or until done.
  • 10.Remove from oven and cool before serving.
