Vegan Egg Salad

Ingredients

  • 1 15oz. package firm tofu.
  • 1 stalk scallion.
  • 1/2 stalk celery, minced.
  • 1/2 teaspoon dill weed, fresh, minced.
  • 2 teaspoons Vidalia onions, minced.
  • 1 teaspoon capers, minced.
  • 2 tablespoons pickle relish.
  • 1 tablespoon vegan mayonnaise.
  • 1/8 teaspoon dry mustard.
  • 1/4 teaspoon agave nectar.
  • 1/4 teaspoon tumeric.
  • dash of Italian seasoning and garlic powder.
  • salt and pepper to taste.

Instructions
  • 1. Mash/grate tofu after pat drying.
  • 2. In a separate bowl, mix mayonnaise, tumeric, salt and agave nectar.
  • 3. Add tofu and other ingredients to the mayonnaise mixture, mix thoroughly until ingredients are combined.
