Ingredients

  • 1 cup all purpose flour.
  • 1 1/2 cups yellow cornmeal.
  • 1 tablespoon baking powder.
  • 1/4 cup brown sugar.
  • 1/2 teaspoon fine sea salt.
  • 2 egg substitutes.
  • 1/4 cup extra virgin olive oil.
  • 1/4 cup liquid margarine.
  • 1 1/2 cups soy milk.
  • 1/4 teaspoon ground nutmeg.

Egg Substitute Instructions
  • 1. Mix 4 tablespoons water with 3 teaspoons vegan egg replacer.

Instructions
  • 1. Pre-heat oven to 400 F.
  • 2. Spray a rectangular baking (should be at least 3" deep) pan with canola or olive oil.
  • 3. Combine cornmeal, sugar, salt, flour and baking powder in a mixing bowl and mix well.
  • 4. In a separate bowl, mix egg substitute, soy milk, oil and liquid margarine together.
  • 5. Add liquid mixture to cornmeal and stir until all is moist.
  • 6. Pour mixture into pan.
  • 7. Bake in pre-heated oven for approximately 35-40 minutes.
  • 8. Let it cool for a few minutes before removing from pan.
  • 9. Serve warm.
