Vegan Chocolate Chip Cookie

Ingredients

  • 2 cups all purpose flour.
  • 3 level tsp baking powder.
  • 1 cup chocolate chips.
  • 2 cups brown sugar.
  • 3/4 cup of cocoa.
  • 3/4 cup vegetable oil.
  • 1/2 teaspoon sea salt.
  • 1 teaspoon baking soda.
  • 2 teaspoons vanilla extract.
  • 1/2 cup soymilk.

Instructions
  • 1. Preheat oven to 350F.
  • 2. Place cocoa, flour, salt and baking soda in a bowl and mix thoroughly.
  • 3. In a separate bowl, add brown sugar, soy milk, vanilla and oil.
  • 4. Mix ingredients thoroughly.
  • 5. Add the dry ingredients and mix until dough is tight.
  • 6. Continue mixing while adding chocolate chips.
  • 7. Form dough into small balls and then flatten.
  • 8. Place cookie mixture in ungreased tin and bake for approx. 10 minutes in the pre-heated oven.
  • 9. Let it cool for half an hour or more before serving
