Vegan Chicken-less Salad

cucumber and tomato salad Healthy and delicious!

Ingredients

  • 1 8oz package Trader Joe's Chicken-less Chicken.
  • 2 cups baby spinach.
  • 1 large gourmet cucumber.
  • 2 medium tomatoes.
  • 1/8 Vidalia onion.
  • 1 red bell pepper.
  • 1/8 red cabbage.
  • 1/2 cup alfalfa sprounts.
  • 3 tablespoons light virgin olive oil.
  • Salt and pepper to taste.
  • Dash of cayenne pepper (optional)

Instructions
  • 1. Cut chicken-less chicken to desired size.
  • 2. Chop spinach.
  • 3. Slice cucumber into discs.
  • 4. Slice tomatoes and bell pepper as desired.
  • 5. Dice onion and bell pepper.
  • 6. Chop cabbage.
  • 7. Place ingredients in a salad bowl and toss.
  • 8. Serve immediately.
