Vegan Cheese Broccoli Soup

Ingredients

  • 2 cups vegetable broth.
  • 1 medium Vidalia onion, diced.
  • 2 cups broccoli, chopped.
  • 2 stalks celery, chopped.
  • 3 cups water or as much as needed.
  • 2 medium potatoes, diced.
  • 1 cup soymilk.
  • 3/4 cup grated soy cheddar cheese.
  • 1/2 teaspoon ground nutmeg.
  • fine sea salt and pepper to taste.

Instructions
  • 1. Combine potato, broccoli, vegetable broth, water, nutmeg, celery in a saucepan.
  • 2. Cook over medium heat until broccoli is tender and potato is soft.
  • 3. While stirring, add soymilk, salt and pepper to taste.
  • 4. Serve hot and topped with cheddar cheese.
