Vegan Carrot Cake

Ingredients

  • 2 cups whole wheat flour.
  • 1 tsp baking powder.
  • 1 tsp baking soda.
  • 1/4 teaspoon sea salt.
  • 1 1/4 cups water.
  • 1 cup dates.
  • 1 cup raisins.
  • 1 teaspoon cinnamon.
  • 1 teaspoon grated ginger.
  • 1/2 teaspoon grated cloves.
  • 1/2 teaspoon grated nutmeg.
  • 1/2 cup grated carrot.
  • 1/3 cup orange juice concentrate.

Topping - Optional
  • 6 oz powdered sugar.
  • 1 1/2 oz vegan margarine.
  • 1 1/2 oz soy milk.

Topping Instructions
  • Put all the icing ingredients in a pan and slowly bring them to a boil while stirring.
  • Boil for one minute, then pour it into a bowl.
  • Beat the icing while it is cooling to avoid lumpy crystals.
  • Add more or less soy milk to achieve desired consistency.

Baking Instructions
  • 1. Preheat oven to 375 F.
  • 2. Place all the flour, salt, baking soda and powder in a bowl and mix thoroughly.
  • 3. In a separate pan, add the water, raisins, cinnamon, nutmeg, ginger, cloves and dates.
  • 4. Boil briefly then reduce heat and allow to simmer.
  • 5. Add the simmered mixture to the carrots in a separate bowl.
  • 6. Let mixture sit for a while and cool.
  • 7. Add the orange juice to the cooled carrot mixture.
  • 8. Mix thoroughly.
  • 9. Add the flour mixture to the carrot mixture and stir well.
  • 10. Place mixture in greased loaf tin and bake for 45 minutes or until done.
  • 11. Let it cool for half an hour or more.
  • 12. Spread the icing over the top of the cake and leave to set.
  • 13. Optional - Add walnuts.
