Vegan Callaloo

Ingredients

  • 1 can callaloo or a bundle of freshly cut callaloo.
  • 1 medium onion, sliced.
  • 1 medium tomato, diced.
  • 1/4 scotch bonnet pepper, seeded and deveined.
  • 3 tablespoons olive oil.
  • 1/2 teaspoon fine sea salt.
  • 1/4 teaspoon dried thyme.
  • 1/4 cup water.
  • black pepper to taste.

Instructions
  • 1. Heat oil in skillet.
  • 2. Add onions and cook until translucent.
  • 3. Add scotch bonnet pepper, salt and tomato.
  • 4. Stir mixture until vegetables are cooked.
  • 5. Add callaloo and water, reduce heat.
  • 6. Add black pepper and allow to simmer for approx. 10 minutes.
  • 7. Serve warm with Fried Dumplings, roast breadfruit, boiled green bananas or Jamaican hard dough bread.
