Ingredients

  • 1 cup all purpose flour.
  • 1 cup whole wheat flour.
  • 2 eggs substitute.
  • 1/2 cup brown sugar.
  • 1/2 teaspoon ground ginger.
  • 2 cups peeled and chopped granny apples.
  • 1/2 teaspoon ground nutmeg.
  • 1/2 cup vegan margarine.
  • 1 cup raisins.
  • 1 teaspoon baking soda.
  • 1 teaspoon baking powder.
  • 1/4 teaspoon fine sea salt.
  • 1 teaspoon cinnamon.
  • 1 teaspoon pure vanilla extract.
  • 1 cup chopped walnuts.
  • 1/4 cup extra virgin olive oil.

Egg Substitute Instructions
  • 1. Mix 4 tablespoons water with 3 teaspoons vegan egg replacer.

Baking Instructions
  • 1. Pre-heat oven to 350 F.
  • 2. In a mixing bowl, mix whole wheat and all purpose flour, baking powder and soda, nutmeg, ginger, salt and cinnamon.
  • 3. In a separate bowl, whisk egg replacer, oil, margarine, vanilla, sugar, raisins, nuts and apples.
  • 4. While stirring, add the flour mixture and continue until well mixed.
  • 5. Pour mixture into one large baking pan or two smaller ones.
  • 6. Bake in pre-heated oven for approximately 40 minutes.
  • 7. Let it cool before cutting.
  • 8. Cut as desired and serve.
