Vegan Apple Pie

Pie Ingredients

  • 8 cups of cored and thinly sliced Granny Smith apples.
  • 1/2 cup of brown sugar.
  • 2 teaspoons of lemon juice.
  • 1/4 teaspoon of grated nutmeg.
  • 1/3 cup of softened vegan margarine.
  • 1 teaspoon of ground cinnamon.

Pie Crust Ingredients
  • 2 Cups flour.
  • 1 1/2 tablespoon sugar.
  • 1/2 teaspoon salt.
  • 1/2 cup vegan margarine.
  • 2 tablespoon vegetable oil.
  • 3 tablespoon cold water.

Pie Crust Instructions
  • Combine the flour, sugar and salt in a large bowl.
  • Add and mix vegan margarine until crumbly.
  • In a separate bowl, whisk together the oil and water.
  • Add the oil and water to the flour mixture.
  • Continue mixing until a dough forms.
  • Cover the dough with plastic wrap, then chill for 30 minutes.
  • Roll out onto a lightly floured surface to about 1/4 inch thickness.
  • Gently press into a pie plate.

Baking Instructions
  • 1. Preheat oven to 425 F.
  • 2. In a separate bowl, combine sugar, lemon juice, nutmeg and pastry flour.
  • 3. Place half of sliced apples on pie plate and sprinkle with 1/2 sugar mixture.
  • 4. Add rest of apples and rest of sugar mixture.
  • 5. Dot the filling with vegan margarine.
  • 6. Place remaining crust over pie and trim edges.
  • 7. Fold pastry overhang under then bring up over pie plate rim.
  • 8. For a nice golden glaze, brush top of crust with some soy milk.
  • 9. Bake for 40-50 minutes until crust is golden.
  • 10. Let it cool for half an hour or more.
