Vegan Ackee

Ingredients

  • 1 can of ackee or 1 doz. in pods.
  • 3 - 4 tablespoons olive oil.
  • 1 medium tomato, diced.
  • 1 medium onion, sliced.
  • 1/4 scotch bonnet pepper, seeded and deveined.
  • 1 medium carrot, sliced thinly.
  • fine sea salt and black pepper to taste.

Instructions
  • 1. Heat oil in skillet.
  • 2. Add onions and cook until translucent.
  • 3. Add scotch bonnet pepper, salt, tomato and carrot.
  • 4. Stir mixture until vegetables are cooked.
  • 5. Add ackee and reduce heat.
  • 6. Add black pepper and allow to simmer for 5 - 10 minutes.
  • 7. Serve warm with Fried Dumplings, roast breadfruit, boiled green bananas or Jamaican hard dough bread.
