Raw Vegetable Soup

Ingredients

  • 2 avocados.
  • 2 gourmet cucumbers, peeled.
  • 1 jalapeno pepper, seeded.
  • 1/2 red bell pepper.
  • 1/2 Vidalia onion, diced.
  • 2 tablespoons freshly squeezed lemon juice.
  • 2 cups vegetable stock.
  • 3 cloves roasted garlic.
  • 1 tablespoon fresh cilantro.
  • 1 tablespoon fresh parsley.
  • 1 carrot, diced.
  • Salt and pepper to taste.

Instructions
  • 1. With the exception of the onions and carrot, puree all ingredients.
  • 2. Add onions and carrot.
  • 3. Serve immediately.
