Raw Mousse Pie

Almond Crust Ingredients

  • 2-3 cups almonds, soaked 8-12 hours.
  • 1/2 teaspoon fine sea salt.
  • 4 tablespoons lemon juice.
  • 1 tablespoon psyllium powder.
  • 1 teaspoon garlic herb seasoning.

Mousse Ingredients
  • 5 cups chopped baby spinach.
  • 1/2 cup raw pine nuts.
  • 1/3 cup lemon juice.
  • 1/2 teaspoon fine sea salt.
  • 1 tablespoon water.
  • 1/2 cup firm tofu.
  • 1 tablespoon red onion, diced.
  • 1 tablespoon fresh dill, finely chopped.
  • 1 stalk celery, chopped.
  • 2 teaspoons psyllium powder.

Crust Instructions
  • 1. Process nuts in food processor until fine.
  • 2. Add salt and pulse chop.
  • 3. Gradually add lemon juice until mixture binds together.
  • 4. Sprinkle psyllium while processing.
  • 5. Add mixture to 9 inch pan and set aside.

Mousse Instructions
  • 1. Add celery, spinach, lemon juice, salt and water to food processor, process until smooth.
  • 2. Add tofu, pine nuts, dill and onions.
  • 3. Process until mixture is thick.
  • 4. Gradually sprinkle psyllium while processing.
  • 5. Add the pate into the pie crust and refrigerate for an hour or more before serving.
